We are here in Zambia and have some village data that we want to upload
into DHIS2. How do we add large sets of data? What format do these have
to be in?

Dear Silvia,
When you talk about importing data to dhis2 you have already created corresponding data elements and you will need to map them you excel file fields.
In the Developers manual, you will have different formats including CSV

Do you already have these villages as OrgUnits?
Since you mention GIS, I suppose you either
a) want to add them to the hierarchy, which is possible, but would require assigning each of them a ParentUID (see table 1.14 here: https://www.dhis2.org/doc/snapshot/en/developer/html/ch01s10.html)
or
b) you could add these as events with coordinates
