Do anyone knows if it is possible to make some variables hide or encrypted ? e.g. like confidential variables in tracker.

and take note of the limitations.
I would think long and hard about storing anything confidential in tracker if I were you, as you probably need to completely rethink your setup and how the information contained in the database is handled.
